Yorkshire pudding is a staple for every British Sunday dinner. Not actually a pudding at all, it is a savory side dish very similar to a popover, but a different shape.

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 4 eggs plus 1 egg white, beaten
  • 1 1/4 cups milk


  1. Preheat oven to 450 degrees F.
  2. Sift the flour and salt into a mixing bowl.
  3. Add the eggs and half of the milk, whisk.
  4. Whisk in the remaining milk and transfer to a mixing jug with a pouring spout.
  5. Refrigerate for at least 1 hour.
  6. Add 1 teaspoon of vegetable oil or beef drippings to muffin pan.
  7. Put the muffin pan in the oven until the oil is smoking, about 5 minutes.
  8. Fill cups 1/3 full, the oil should sizzle when you add the batter.
  9. Put the pan immediately into the oven and close the door.
  10. Bake for 12 to 20 minutes until well risen and golden brown. Remember DO NOT open the door until they are done or they will collapse.
