Homemade Lemon Curd

Homemade Lemon Curd is sweet, creamy, and full of fresh lemon flavor. Perfect for spreading on waffles or scones, and a great way to add a fun twist to your favorite recipes!

  • zest of 1 meyer lemon
  • 1 1/4 c. sugar
  • 1 stick unsalted butter at room temperature
  • 4 large eggs
  • 1/2 c. lemon juice juice of 2 lemons
  • 1 tsp. lemon extract
  • 1/8 tsp. kosher salt


  1. Combine lemon zest and sugar in a blender or food processor; pulse until zest is finely minced.
  2. Add butter and blend.
  3. Add eggs, lemon juice, lemon extract, and salt; blend until combined.
  4. Pour mixture into medium saucepan and cook over medium-low heat, stirring occasionally, until thickened (just below simmer - 170 degrees F).
  5. Continue stirring 2-3 minutes after mixture thickens.
  6. Remove from heat and transfer to a wide mouth glass jar with a lid.
  7. Place in refrigerator to cool.
  8. Keep refrigerated.
