Grilled Huli Huli Chicken Kabobs

Grilled Huli Huli Chicken Kabobs – Juicy pineapple and tender chicken coated in a sweet and savory glaze then grilled to perfection! The perfect summertime, quick dinner!

Ingredients

Sauce:

  • 1/2 cup reduced sugar ketchup
  • 1/4 cup reduced sodium soy sauce (gluten-free if needed)
  • /2 cup coconut sugar (or brown sugar)
  • 2 tablespoon rice vinegar
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons garlic powder

Kabobs:

  • 1 1/4 pounds skinless chicken breast, cut into 1-inch cubes
  • 1 fresh pineapple, skin removed, cored and cut into 1-inch cubes
  • Cilantro, for garnish

Instructions

  1. Sauce: In a small saucepan, whisk together the ketchup, soy sauce, brown sugar, rice vinegar, ground ginger and garlic powder. Remove 1/3 cup of sauce and set aside.
  2. Chicken: Place the chicken in a bowl and add the reserved sauce. Let marinate for 30 minutes.
  3. While chicken marinates, bring the sauce to a boil then reduce heat to a simmer and let sauce reduce to a syrup. Brush sauce over seared kabobs as they cook. Remove from heat once sauce is reduced, 10 - 12 minutes.
  4. Remove the chicken from the marinade and thread onto the kabobs, alternating chicken and pineapple. Discard marinade.
  5. Grill over medium heat; a grill pan works great as well. Cook for 2-3 minutes on each side, or until seared.
  6. Serve immediately with remaining sauce.
