Easy Coconut Macaroons

These macaroons are perfect for your Easter or Passover celebration!

INGREDIENTS

  • 8 large egg whites
  • 2/3 cup granulated white sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon almond extract
  • 1/2 teaspoon coconut extract
  • 1/2 teaspoon kosher salt
  • 6 cups sweetened coconut flakes

INSTRUCTIONS

  1. Preheat the oven to 350 degrees F, and line baking sheets with parchment paper. 
  2. Place the egg whites, sugar, corn syrup, almond extract, coconut extract and salt in a large bowl and whisk to combine. 
  3. Stir in the coconut, and scoop 1/4-cup sized balls onto the prepared baking sheets.
  4. Bake for 25 minutes, or until the tops are beginning to turn golden.
