Dessert Macaroni And Cheese

  • 1/2 # elbow macaroni cooked to al dente


  • 1/4 cup unsalted butter
  • 1/4 cup all purpose flour
  • 2 cups whole milk
  • 8 oz cream cheese
  • 1/2 cup + 1 Tablespoon granulated sugar
  • pinch of salt
  • 1 vanilla bean, split or 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups fresh or frozen blueberries


  • 1/4 cup panko breadcrumbs
  • 1/4 cup granulated sugar


  1. Heat a large pot of salted water for the pasta.
  2. Cook the pasta while making the batter for the custard
  3. To make a roux, combine the butter and flour in a small saucepan
  4. Cook over medium heat until it begins to simmer and thickens to a pale beige paste
  5. Slowly whisk the milk into the roux
  6. Continue to whisk until the sauce has no lumps and is the consistency of thick cream
  7. Scrape the vanilla seeds into the warm sauce with a small pinch of salt
  8. Set aside to cool (see note)
  9. Preheat the oven to 325°f convection or 350°f regular.
  10. Lightly butter a 2 quart casserole dish
  11. Cream the cream cheese and sugar in a mixing bowl
  12. Scrape the bowl
  13. Add the eggs, one at a time, scraping the bowl after each egg
  14. Add the cooled white sauce to the cream cheese mixture
  15. Add the cooked pasta and the blueberries to the batter
  16. Pour the batter into the casserole dish
  17. Combine the Panko bread crumbs and 1/4 cup sugar
  18. Sprinkle the topping over the custard
  19. Bake until golden brown, slightly puffed, and the custard is set in the center
  20. Best eaten warm

Make sure to cook the macaroni "al dente". Leaving the pasta slightly undercooked will allow it to absorb the sauce as it bakes.
If you combine the white sauce with the cream cheese mixture while the sauce is very hot the mixture will look curdled. Allow the sauce to cool to a very slightly warm or room temperature.
Just like savory macaroni and cheese, this is best still warm from the oven. Leftovers can be refrigerated and re-warmed.
