Herb Roasted Potatoes

  • 3 lb potatoes diced into 1" cubes
  • 1/3 cup olive oil
  • 1 Tbs dried thyme
  • 1 Tbs dried rosemary
  • 1 Tbs dried parsley
  • 2-3 cloves garlic minced
  • 1/2-1 Tbs sea salt
  • !/4 cup shredded parmesan optional


  1. Preheat oven to 400.
  2. In large bowl add your potatoes and olive oil and toss to cover.
  3. Add in thyme, rosemary, parsley, garlic and sea salt.
  4. Mix together until evenly coated and spread on a large baking sheet.
  5. Bake for 1 hour turning halfway through.
  6. Place in serving dish and sprinkle with more salt and parmesan if desired.
